Ruta ternasco

Ternasco de Aragón, the first Spanish fresh meat endorsed with a Specific Denomination, has, since 1996, carried the seal of Protected Geographical Indication.

In Zaragoza, the Ternasco de Aragón is the protagonist of the Aragonese tables both on special occasions, roasted in the oven, with “bakery” potatoes, and in country meals, either grilled or in the form of tasty stews, a legacy of the shepherds who they raise.

We begin our gastro-tourist route tracing an axis from north to south of the city. On the left bank of the Ebro river we discover several examples of industrial architecture, today converted into nurseries for entrepreneurs and cultural centers, such as the old Azucarera del Rabal ―of the 19th century - or the Estación del Norte . Modernist architecture is also reflected in the Casa Solans, of Miguel Navarro, and very close to it we can taste one of the most appreciated parts of Ternasco de Aragón, the grilled "ribs".

The Stone Bridge, the oldest surviving over the river Ebro, guarded by the lions sculpted by Francisco Rallo, connects the Arrabal neighborhood with the tourist heart of Zaragoza, becoming one of its best viewpoints. the cathedrals del Salvador y El Pilar, the renaissance palaceLa Lonja and the Town Hall of the city are proud, giving way to one of the areas with the highest concentration of restaurants in Zaragoza, where they will surprise us, from a historic restaurant located in a modernist building from the 19th century, to a bar that offers "tapas with Ternasco de Aragón more cane”, passing through an updated Aragonese grill.

We continue south, crossing the Plaza de España, with its Roman and gastronomic Puerta Cinegia, to continue touring the Paseo de la Independencia, the nerve center of the city and its cuisine that culminates in the Plaza Aragón, with its monument to the Justice of Aragon. Tapas restaurants and temples, which have made Ternasco de Aragón their flag, dot the intersections of this iconic boulevard, Plaza de Aragón and its neighbor Basilio Paraíso, gateway to Paseo Sagasta, which still preserves some of the best examples of Zaragoza modernism.

With the route of the Ternasco you will be able to enter another area of ​​the center of Zaragoza with a greater profusion of catering establishments that pay homage to the Ternasco de Aragón: the Plaza de San Francisco university and the neighboring neighborhood of La Romareda, which houses the Real Madrid soccer field. Saragossa and the Auditorium.

And a few steps away we will see Alfonso I el Batallador, who watches from the monument of José Antonio Labordeta Park, this beautiful lung of Zaragoza, worth a visit. If we continue south, towards the popular neighborhood of Torrero, we will continue discovering the innumerable possibilities of Ternasco de Aragón, seasoned only with a splash of oil from the Bajo Aragón or Sierra del Moncayo denominations of origin and a little rosemary from the terroir.

About 50 km to the south, along the Mudéjar highway, the town of Cariñena offers emblematic restaurants, strongholds of Aragonese produce, both in its historic center and in one of its wineries, where you can pair Ternasco with Designation of Origin wine, which bears his name.

And if, instead of going through Zaragoza from north to south, we do it from east to west, we will see that this unique meat is the queen – with the permission of borage – in Zaragoza cuisine. In the San José neighbourhood, for example, we will delight in its haute cuisine, in Zaragoza's oldest Michelin star, and in the neighboring Las Fuentes neighbourhood, we will discover its most ancient flavors, in a historic restaurant.

At the other extreme, in La Almozara, very close to the Ebro river, we can eat it in a family tavern, either as a tapa or as a sandwich, and even if we continue our journey, upstream of the Ebro, we can discover Alagón, a riverside town that treasures paintings of Goya, one of the jewels of the Aragonese Mudejar and an authentic temple dedicated to the Ternasco de Aragón.
